One Pan Pork Chop Skillet


I so very much love a dinner where I can dump it all in one skillet. This meal has it all, the tender pork chops, potatoes, carrots, onions and I even threw in some asparagus for good luck! If nothing else, this meal made my house smell delicious. There will be plenty of yummy drippings in the bottom of the pan. I just drizzled them over the plate, but you could easily add a little flour and end up with a nice gravy. Perfect for a cold, snowy day!

4 pork chops
1/2 cup beef broth
3 potatoes
10 baby carrots (or 2 regular, cut into 3 inch pieces)
1/2 onion
8 asparagus spears
1 tsp. Ranch Seasoning Mix
Salt and pepper to taste
1 tsp. parsley flakes

Spray cooking spray in a skillet heated over medium-high heat. When the pan is hot, set in pork chops. Brown for 3 minutes on each side. Add beef broth, diced potatoes, carrots, diced onion and asparagus. Sprinkle with Ranch seasoning. Heat to a boil. Reduce heat, cover, and simmer for 30 minutes. Sprinkle with salt, pepper and parsley and serve.

I followed your 'link up' over from Lisa's 'tempt my tummy Tuesday'.

I wanted to check out your pork chop dinner becasue any more, anything having to do with pork chops, just makes me smile.

See, for about seventeen years of our marriage, I was CONVINCED that my husand did not like pork chops! Period. And I nevr could figure that out. He loves pork. Pork steaks, ham, sausage, roasts... etc. Heck, working for the caterers he did LOTS of pig roasts, and we've even done a few for friends on our own, and he'll nibble on every single bit of that pig. And yet I was CONVINCED he did not like pork chops. Weird!

Why was I so convinced? He had told me so. During the first year of our marriage. Or so I had thought. Turned out, he hadn't liked the way I had fried them up - way to dried out. And since we are always ever so clear in our communicating with one another (o:-p) I had taken it one way, while he had meant it another.

All of those years when I had never again bought pork chops, he had been wondering why. They had been so on sale so many times, and yet I passed them by. He figured that I didn't like them for whatever reason.

Then it all came out one time at his mom's table of all places (she has never been happy that he married me, and this May is our 30th ann.). He was taking a THIRD pork chop and commenting on how good they were and just casually mentioned how I didn't like them so didn't cook them ....

It turned out good in the end, at least between the two of us. We both laughed heartily and to this day get a good chuckle over the whole thing. His mom on the other hand still finds the whole situation ridiculous! Aw well ....
