Sammy Burgers


One adventurous day at the grocery store I purchased a can of pink salmon. I know right? Crazy!! On the back it had a list of ways to use it, and thus became my Sammy Burger. First, if you are pregnant or have a light stomach don't open the can! I had to slime through the entire thing to pull out chunks of bone and something brown and slimy. Yes, the burgers were quite delicious, husband ate two, but the process of cleaning out the can was a little ewww. Once I had the bones and clumps out, the salmon was very easy to flake, stir and shape. I just have to warn you, it's not like tuna where you drain and it's ready. I had planned on making these outside on the grill, but I added 2 eggs which made them too delicate they would have fallen through. I used a grill pan on the stove, but once they cooked they got a delicious crispy outer layer. Have fun with fish!!

1 can Pink Salmon
1/2 cup bread crumbs
1/4 cup mayo
1 egg, beaten
1/8 tsp of garlic salt, pepper, ground mustard
1 tsp. parsley flakes
1/4 cup. finely chopped onion
1 tsp. lemon juice

Flake and debone salmon. Stir in bread crumbs, mayo, beaten egg and onion. Add lemon juice, garlic salt, pepper and ground mustard. Shape into 4 large patties and grill until the crispy. Serve on a bun.


I served up the burger with mayo on the bun (tarter sauce would have been good now that I'm thinking about it, or ranch even) lettuce and tomato. I sliced up some divine farmer's market cucumber on the side.



This brand was on sale, that's why I looked at it. It is kind of a little pricey, so watch for deals!

Toasted Tuna Sandwiches



Are there recipes that remind you of your mom? This is my "memories of mom" recipe. During elementary school and junior high I would walk home for lunch and at least once a week these delicious sandwiches would be waiting for me. I can remember my mom making stacks of them for her 5 kids to gobble up. I don't know why we smear mustard on top, but it's just part of the tradition! I started making these for my husband and have since converted him to the true way to eat a tuna sandwich. These are good with any kind of bread from whole wheat, to white, to sourdough. This recipe is easy to double, triple or even half. Enjoy!

2 cans (5 oz.) chunk-light tuna
1 1/2 TB mayo
16 slices bread
Butter
Mustard

Drain and flake tuna. Stir in mayo until moist. Spread tuna on bread and make sandwiches. Spread butter on the outside of both slices of bread. On a warm skillet toast sandwiches until golden, about 2 minutes on each side. Spread mustard on the top of each sandwich and slice diagonally.

Crunchy Fish Tacos



I purchased 2 large bags of fish sticks during one of my coupon frenzies, so I've been trying to use them in more creative ways then just on a plate with tarter sauce. Say hello to the fish taco. We've been enjoying these for lunches lately. Last week Husband said I need to work on a Tuna Taco, hmm. That will take some imagination, watch for it soon.

12 fish sticks
1/2 roma tomato, diced
1 cup shredded lettuce
4 tortillas
1/4 cup sour cream
1 tsp. taco seasoning
Red onions, optional

Bake fish sticks according to package directions or until crispy. In a bowl mix together sour cream and taco seasoning. Spread sour cream mixture on each warmed tortilla. Place fish sticks on top of tortilla and cover with shredded lettuce and diced tomatoes. Garnish with red onions.


This is what your sour cream mixture will look like. Add more or less taco seasoning as you want until it has the perfect flavor. Husband sometimes like it with a dash of chili powder.
